Red Cabbage, Apple and Walnut Salad

Finely slice half a red cabbage.

Rub in a tablespoon of umeboshi vinegar (or a little salt).



Chop an eating apple.

Roast/toast and then chop a handful of walnut halves.

Add them to the red cabbage with a tablespoon of raisins.



Makes enough for two for lunch!
